I don’t really follow Thomas Penton but he’s a successful DJ/Producer with many releases + a nice touring sched. I found this article an interesting read, because he generously opens up and reveals a lot of his production techniques. It made me think about how electronic music production’s evolving (for better or worse) to be all “in-the-box” and how the “loudness war” continues to get louder. His method of mastering as he composes, squashing the hell out of all of his elements, working entirely in headphones and using some clever layering/sequencing to maximize basslines would typically be frowned upon by old(er)-school producers. But its also a process that works well for him, and some techniques I’ve tried in the past. At the same time, I’m starting to see a movement of folks that are fighting this “digital racket” by consciously using outboard analog gear and making sure there’s more dynamic range in their tunes.

So after trying the slice at The Beat Kitchen, I needed another, and Santullos was near by. The spot was recommended by a wedding client a while back so it was good to finally try it. They give fairly large slices, but were stingy on the pepperoni for mine (it was a busy day for them…). I liked it a lot though - the sauce was flavorful and cheese was greased up. The crust was really thin and floppy which made it easy to fold which really brought the whole package together. Good NYC style pizza that I’ll keep it in mind next time I’m back in Wicker Park.

I had Papa Ray’s pizza and wings for my birthday this past year and had been wanting to try the pizza again ever since (the wings were great btw). It has three locations, including one down the street from me at Lawrence and Sheridan. Lucky me got a coupon in the mail so I ordered and it got here quick. It’s solid to good pizza, I think I actually prefer just cheese for this one over my usual pepperoni. It sits somewhere in the middle between thin crust and pan. It tastes like my memory of Chuckie Cheese pizza (not how it really is these days).
